Ask knowledgeable food fans finding top Chinese meals in Seattle, therefore the snarky response is constantly: not as much as three hours into the north, in the Vancouver area. Fortunately, the Seattle location comes with a number of Sichuanese restaurants, with great general high quality and some stellar meals. At these restaurants, you'll find even more adventurous selection options, including the pickled and peppered products typical associated with the Sichuan region—especially some fiery ma la (numbing and spicy) dishes that are included with scarlet colors. Most of these places are on the Eastside, but when I'm in the mood for something spicy, I don't mind crossing Lake Washington.
